HOW TO USE:
- Prepare Your Workstation: Ensure you have a clean, stable cutting board and a safe area for filleting.
- Position the Fish: Place the fish on the cutting board, typically on its side, with the head facing away from you.
- Make the Initial Cut: Locate the gill plate or just behind the pectoral fin. Insert the blade behind this point and cut downwards until you feel the spine.
- Cut Along the Spine: Turn the blade to run parallel with the backbone. Using long, smooth strokes, guide the knife along the length of the spine, separating the fillet from the bones. The blade's flexibility will help you follow the contours.
- Remove the Fillet: Continue cutting until the fillet is fully separated from the backbone. Flip the fish over and repeat the process for the other side.
- Remove Rib Bones (Optional): If needed, place the fillet skin-side down. Locate the rib bones and carefully slide the knife under them, cutting them away from the flesh.
- Skin the Fillet (Optional): Place the fillet skin-side down. Starting from the tail end, hold the skin firmly with one hand. Angle the knife slightly down and slide the blade between the skin and the flesh, moving it along the length of the fillet to remove the skin.
- Clean and Store: Rinse your fillets and the knife. Store the knife safely in its included blade protector.
